CORNED BEEF JOLLOF RICE RECIPE

This dish is inspired by my Mum, as it was a firm favourite during my childhood.

INGREDIENTS 
250g of Basmati rice
300ml of Beef Stock
1 tin of Corned Beef
1 large slices Onion
300g of Plum Tomatoes
80g of Tomato paste
30g of Thyme
40ml of Water
10ml of Vegetable oil
Half a teaspoon of grated Nutmeg
3 Bay leaves
1 Habanero chilli

GINGER BLEND
40g of Ginger 
1 teaspoon of Aniseed
I medium sized Onion
2 cloves of Garlic

GARNISHING
1 large sliced Tomato
1 large thinly sliced Onions




METHOD
Add the oil to a saucepan on a medium heat for about 50 seconds.
Add the sliced  Onions and fry gently for about 2 minutes.
Blend your Ginger, Onion, Aniseed and Garlic into a smooth paste.
Add 40g of your Ginger blend and fry for 3 minutes or until the oil separates from the Ginger mix.

Mix 40ml of water to the Tomato paste and mix till well combined.
Add the Tomato paste to the Ginger blend and fry gently for 4 minutes or until the oil separates from the sauce.
Add the Habanero chilli and salt. Fry for a further 3 minutes 
Blend your Tomatoes into a smooth consistency and add to your mixture. Add the Bay leaf and fry gently for 20 minutes.

TIP
Pre blend your Tomatoes and cook it down to reduce the water content. This saves time.

Add the grated Nutmeg and Thyme and cook for 2 minutes.


RICE
Wash your rice till the water runs clear.
Cover the rice with hot water and cling film. Let the rice sit for at least 10 minutes 



Add the rice and gently fry the mixture for about 5 minutes. 
Add the chunks of Corned Beef and gently mix everything together. 
Add the Beef stock to the rice and mix till well combined (taking care not to break the Corned Beef).
Bring the rice to a boil and cover with a grease proof paper to trap in the steam.
Reduce the heat to its lowest setting.
Cook the rice gently for about 10-14 minutes.
Your Jollof rice or ready!
