HOW TO COOK BEEF SHORT RIBS PERFECTLY


How about flavour packed slow cooked, melt off the bone Beef Short Ribs recipe? Perfect addition to your Sandwiches, Pasta, Rice or Salads. I served this with my Crunchy Coleslaw recipe which is next.




INGREDIENTS 
1kg of Beef Short Ribs (best sourced from your local butchers)
2 tablespoonfuls of Chinese 5 spice mix
1 teaspoonful of freshly milled Black Peppercorns 
Salt to taste 
50g of optional fresh Rosemary 
5 tablespoonfuls of Olive oil

TRADITIONAL CHINESE 5 SPICE MIX
Sichuan peppercorns 
Fennel seeds 
Cinnamon 
Cloves
Star Anise

CHINESE 5 SPICE MIX (ALTERNATIVE MIX)
Aniseed
Cardamom pods
Nutmeg
Cinnamon 
Cloves

GOAT MEAT STROGANOFF


What about this creative and equally Russian inspired recipe for lunch or dinner, using everyday ingredients?


1kg of Goat Meat
80ml of double cream
2 tablespoonful of Sour Cream
1 large peeled and sliced Onion or Shallot
300g of Mushrooms (Shiitake, Chestnut etc)
250ml of water
1 teaspoonful of Corn flour or Plain flour (mix with 4 tablespoonful of water)
80g of chopped Spinach
1 teaspoonful of  English or French mustard
1 tablespoonful of Worcestershire sauce (Lea Perrins) or Dark Soy Sauce
Salt and Pepper to taste

SPICE MIX
1 teaspoonful of Aniseed
30g of fresh Ginger
1 large Onion
Garlic

MY SIGNATURE PRAWN SPAGHETTI RECIPE


This is my favourite dish and a secret recipe I am happy to share. 

Each ingredient has been carefully selected for their amazing natural flavours and cooked perfectly to enhance their flavours.

2 large Red peppers 

2 large Onions

30g of Ginger

3 cloves of Garlic

30ml of Olive oil

250g of 

Baby Plum Tomatoes

40g of Tomato paste

30g of Butter

1 Bay leaf 

1 tsp of Aniseed

400g of peeled Prawns

20g of Basil

30g of Rosemary

Pinch of grated Nutmeg 

Salt & Pepper to taste

SPRING GARI PIÑON or EBA RECIPE

6 tablespoonfuls of Ndudu’s Dipping Chilli sauce
Juice and zest of 1 Lemon
4 tablespoonfuls of Olive oil

TASTIEST CHILLI DIPPING SAUCE


CHILLI SAUCE
1 large charred Red pepper 
10 Thai red chillies
4 cloves of Garlic
I large Onion
The zest and juice of 1 large Lemon
20g of Ginger
3 tablespoonfuls of Coconut oil
2 tablespoonfuls of brown sugar
1 Habanero chilli (optional)
1 stalk of Lemongrass
500ml of water
10g of fresh Thyme

METHOD 
Blend the above ingredients together and follow the videos recipe below.

INGREDIENTS CONTINUED
1 tablespoonful of Corn starch mixed with 4 tablespoonfuls of water
30g of chopped spring onions or onion flowers
20g of fresh basil leaves
Salt to taste

SWEET & SPICY ONION STEW RECIPE




INGREDIENTS 
5 large Onions
15 medium sized Shallots or pearl onions
30g of Ginger
2 cloves of Garlic 
1 teaspoonful of Mustard seeds
1 tablespoonful of Coriander seeds
1Cinnamon stick or half a teaspoon of Cinnamon powder 
100ml of water
1 teaspoonful of Turmeric 
1 tablespoonful of Garam masala 
1 teaspoonful of Cayenne pepper 
190g of Butter 
3 tablespoonfuls of unscented oil of your choosing 
3 Bay leaves 
Salt to taste

THE FULL ENGLISH BREAKFAST RECIPE YOU NEED TO TRY


‘Fafa, can you please show me how to prepare full English breakfast?’ I echoed ‘yeah! Why not’, besides I had guests staying and I could film the process. 

Naturally when I create a recipe I include elements that improves the taste of the dish to my preference. 


In this case emphasis has been placed on the quality of ingredients used with carefully selected herbs and spices for the atmost flavour. 


There are a few rules one has to adhere to when sourcing ingredients, namely;

  1. Your sausages should contain a minimum of 90% meat (read the label)
  2. Buy the best smoked or unsmoked bacon you can afford
  3. Use free range or organic eggsK
Any ‘self respecting’ full English breakfast must include the following;
  1. 6 Sausages
  2. 6 rashers of Bacon
  3. 4 free range or organic Eggs
  4. Black Pudding (
  5. 2 Portobello Mushrooms 
  6. 1 large Onion divided in two
  7. 1 large Tomato divided in two
  8. 250g of Baked Beans
  9. Add a pinch or two of dried Rosemary to the salt you add to taste (for that extra flavour)
Tip 
Your guests will specify what they would include to their English breakfast, hence the quantity of ingredients used will adjust to their preference. 

I prefer to bake my Sausages, Black pudding and Bacon, which gives me time to make hash browns from scratch.
Making Hash browns from scratch is easy to emulate and tastes better when it is homemade.


HASH BROWN INGREDIENTS 
2 large Maris Piper Potatoes 
1 egg 
1 finely chopped shallots (Onions)
1 clove of Garlic (optional)
2 finely chopped Green chillies
30g of chopped spring onions
20g of chopped fresh parsley 
Salt and pepper to taste

CONFIT EGG INGREDIENTS 
4 large free range or organic eggs

200ml of rapeseed/avocado/ vegetable/sunflower oil

Half a teaspoon of chilli flakes 

20g of fresh basil leaves 
Salt to taste

BLACK PUDDING 
Made from pork blood, pork fat/beef suet,oatmeal, oat groats or barley groats and herbs such as pennyroyal originates from the United Kingdom and Ireland.
Most people tend to omit black pudding from the recipe, however an authentic recipe does include it. Be adventurous and try it!


METHOD 

How about trying to replace the potatoes for yam when making your hash browns. See recipe below 👇🏾



Grilling of the Tomatoes, Onions and Mushrooms intensifies their natural flavours and saves you time.
