THE QUICK OVEN GRILLED SMOKY TILAPIA RECIPE


The recipe that should make your Friday dinner as it is easy and quick to emulate.
You can use other types of Fish for this recipe particularly, Red Snapper, Sea Bream, Sea Bass, Cod etc.

INGREDIENTS 
1 large descaled and gutted Tilapia (or your preferred Fish)
4 tablespoonfuls of Olive oil or Coconut oil
2 sliced large Green/Orange or Yellow peppers. You can use any vegetables you have access to
1 large sliced Red Onion
1 Lime/Lemon
Salt to taste



Marinade 
1 large Onion
1 Lemongrass stalk
30g of charred Ginger
1 large char grilled Red Pepper
14 Thai Red Chillies (Reduce the quantity of Chillies to your personal preference)
1 Habanero chilli
4-5 cloves of Garlic 
20g of Thyme 

To serve

MASA - THE AFRICAN GLUTEN FREE CRUMPET RECIPE


Masa is an African crumpet originating from the Hausa tribe. Masa is made from Rice, which is fermented and fried.
This recipe is perfect for your Hors d’oeuvre or Canapés

THE AMAZING PLANTAIN BRIOCHE BREAD RECIPE


My intention was to make Tatale with my over ripened Plantain,however that didn’t excite me enough. I decided to bake Bread for my breakfast and on a whim decided to incorporate the mashed Plantain. The rest they say is history, however this history can be repeated in your Kitchen like NOW!
I’ll love to hear your feedback when you do try the recipe by leaving comments. To start you will need the following;



INGREDIENTS 
330g of Bread flour
7g of instant Yeast
1 levelled teaspoon of Salt
3 beaten Eggs
40ml of Extra Virgin Olive oil 
1 large mashed over ripened Plantain 
130ml of Milk
2 levelled tablespoon of light Brown Sugar
Half a teaspoon of Vanilla extract or grated Nutmeg 
30g of flour for dusting

TO SERVE
Best served with a scoop of the ever tasty Ndudu Black Chilli sauce (Shito).

THE PERFECT GOAT MEAT STEW YOU MUST TRY


This story started with the Evergreen Okro soup (Fetri Toto) recipe and  inspiration from the classic Ghanaian Tuo Zaafi dish.
Traditionally Tuo Zaafi comprises of Ayoyo (Molokhia/ Jute/ ADEME) sauce and a flavour packed stew which is served with a steamed pliable Corn and Cassava flour ball. 


Since I had the Evergreen Okro soup, I thought why not add the stew and serve with Akple.
Enjoy the most amazing Goat Meat stew recipe which can be enjoyed with your favourite carbohydrates now.



INGREDIENTS 
1 kg of Goat Meat 
1 Habanero chilli
1 Cinnamon stick

SPICE BLEND
30g of Ginger
1 large Onion
1 levelled tablespoon of Aniseed 
3 cloves of Garlic 

300ml of your preferred oil for frying and creating a seasoned oil that can be reserved for other recipes 
2 large Onions 
30g of fresh Thyme 
2 tablespoonfuls of Tomato Purée 
750g of blended Tomatoes
Half a teaspoon of grated Nutmeg 
20g of Rosemary 
6 Bay leaves 
2 chopped Green Peppers
4 chopped Green mild Chillies
2 Habanero Chillies (The amount of Chillies you add should suit your personal preference.
Salt to taste

THE EVERGREEN OKRO SOUP - A PESCATARIAN RECIPE


Gosh! The weather is changing here in the UK as it’s freezing. Phew! This requires a healthy spicy soup to boost ones immune system. I’ve been craving for a Pescatarian Evergreen Okro soup this week and had to treat myself to it. No sooner had I finished preparing this soup and asking everyone the recipe they will love to see next on my YouTube channel, ‘Ndudu by Fafa’, (a choice between the Monkfish Red Curry and this Okro soup), did a resounding vote go to the Okro soup. 



Considering the plethora of Okro recipes I have created, I thought the Monkfish curry would win.
So here you have it my lovelies. Enjoy!




INGREDIENTS 
600g of chopped fresh Okra 
1.5 litres of water
800g of Tilapia fillets
1 Red Mullet or Red Snapper fish
500g of Crabs
250g of Smoked Fish
1 large sliced Red Onion
2 Habanero Chillies
6 large mild Green Chillies
250g of Chopped Garden Eggs leaves/ Spinach/Kale
1 levelled teaspoon of Bicarbonate of Soda
2 tablespoonful of a Ginger, Garlic, Onion & Aniseed blend
Salt to taste

3 cloves of Garlic

THE TASTIEST RED RICE RECIPE


Enjoy this budget sensitive and equally delicious Red Rice recipe mixed with Sardines tonight. A must try recipe!

INGREDIENTS
4 tins of Sardines
2 tablespoonful of Tomato paste
1 tinned chopped Tomatoes
1 teaspoonful of Capers, Lemon or Lime juice
2 Bay leaves
1 teaspoonful of dried / fresh Rosemary (optional)
A pinch of grated Nutmeg
2 large peeled and sliced Onions
3 - 4 Kasoa pepper/ Kpakposhito (Pettie Belle chillies) or any Green Chillies
300g of washed Basmati or Jasmine Rice

THE MOST AMAZING CHILLI SAUCE AND MARINADE RECIPE














Introducing a series of budget sensitive recipes starting with this must try Chilli sauce which doubles up as a marinade. It’s imperative to try this recipe as subsequent recipes will refer to this sauce as a base. You can incorporate any spices to the base of the sauce for a different flavour. 


TIP
Best kept in an airtight container and refrigerated for not more than 14 days.

INGREDIENTS
2-3 large Ramiro Red Peppers (Any Red Peppers)
6 large mild Red chilies (Optional)
50g of fresh Ginger
4 Habanero Chillies or African Birds Eye Chillies  (The quantity of chillies used should be to your personal preference)
3 large cloves of Garlic
I large Onion
1 tablespoonful of Aniseed
1 tablespoonful of Chilli flakes
1 tablespoonful of Chipotle chilli flake (optional)
1 Cinnamon stick
3 Bay Leaves
4 pods of Grains of Selim (Hwentia)
3 tablespoonful of White Wine Vinegar
1 tablespoonful of dark Brown or Brown sugar
70g of cold pressed Organic Virgin Coconut oil
Salt to taste

SECOND SAUCE
1 tablespoonful of Caraway seeds

HOW TO PREPARE THE BEST RED CURRY WITH MONK FISH OR ANY FIRM WHITE FISH




In continuation of my budget sensitive recipes using the amazing Ndudu Chilli sauce , I present this Monkfish Red curry sauce. NDUDU CHILLI SAUCE RECIPE 



Ingredients
80g of Ndudu Chilli Sauce
50g of roasted Peanuts or 2 tablespoonful of Peanut butter
500g of your preferred firm white fish (Monk Fish/ Cod/ Hake etc)
1 tablespoonful of Coconut oil
5 ladies fingers cut into sizeable chunks
1 deseeded and chopped Green Peppers
20g of roughly chopped Coriander or Spring Onions to garnish
Salt to taste

THE HEALTHY RED MILLET PORRIDGE YOU MUST TRY




In need of inspiration for my next recipe, I visited my local Asian grocer and discovered different types of Millets.
 In Ghana we have the Pearl Millet (Bajra) which is often mixed with spices to make an amazing porridge known as ‘Hausa Koko’. 



‘Hausa Koko’ translates into porridge made by the Hausa’s as they introduced the porridge to Ghana.

Today I’ll be talking about the highly nutritious Red Finger Millet and some of its main benefits.

BENEFITS 
Weight loss 
 The Gluten free Red Millet contains an amino acid known as Typtophan which reduces one’s appetite
and it’s high fibre content means it keeps you fuller for longer and prevents constipation. A perfect ingredient to add to your weight loss journey.


CALCIUM

The high calcium content of the Red Finger Millet makes it an ideal choice for bone development of children and acts as a preventative measure for bones diseases such as osteoporosis in the  elderly 

AMINO ACIDS
The Red Finger Millet is rich in essential Amino acids that regulates blood sugar levels, helps the Liver, repairs muscle tissues, cholesterol to mention but a few.
The fact that it’s Gluten free excites me as it helps with my IBS. Let’s start cooking....

2 Grains of Selim pods

1 tablespoonful of natural Yoghurt (optional)

THE SMOKY JOLLOF FRIED RICE RECIPE




‘Jollof Rice has over the years risen in its popularity thanks to the Nigeria and Ghana’s friendly competitiveness and the infamous ‘botched’ attempts (as frowned upon by the purists) by international companies and famous individuals.



I’ve partaken in reinventing Jollof Rice by the plethora of recipes I’ve created over the years including Jollof Arancini, Sticky Jollof Rice, Omurice etc (all available on my YouTube channel, ‘Ndudu by Fafa’).


 A perfect Jollof Rice recipe requires a flavour packed Tomato based sauce and must have that distinctive deep orange colour.

INGREDIENTS 
250g of Smoked Bacon lardons 
2 Eggs
20g of chopped Peppers

I’ve just added to the existing controversy of Jollof making by microwaving it (in honour of prepackaged Jollof Rice available in some supermarkets across the UK)



Verdict - It works however it misses the distinctive smoky flavour that’s achieved when cooked in a pot, especially over coal. A great recipe for students and for a quick recipe (provided you have made your Jollof stew)’.



No sooner had I left the above lengthy statement  on my post did a few followers highlight the lack of ‘smokiness’ and ‘crispy bottomed’ part of the rice known as ‘Kanzo’.
 With this in mind I’ve used the leftover Jollof for this smoky Jollof Rice recipe.

HOW TO FRY AND SPICE PORK RIBS PERFECTLY

500g of Pork ribs cut into sizeable chunks 
2 tablespoonfuls of Corn starch
1 tablespoonful of Chinese 5 Spice Mix ( readily available in most supermarkets across the UK)

30g of Basil/ Spring Onions/ Coriander

GRILLED OKRO RECIPE - A HEALTHY SNACK



Okra, Okro, Ladies Fingers or Gumbo is rich in Vitamin B, C, Folic acid, Pottasium and Calcium. It' has a high dietary fibre, fewer calories and it's readily available in most grocers and supermarkets. 

I first made this dish in 2014 and haven't looked back since. It's crunchy, smoky, delicious and acts as a healthy snack.
I usually add it to my Omelette or Salads and enjoy the crunch it offers.

This is an easy snack to make and works perfectly with a tangy sauce. Enjoy!

INGREDIENTS 
200g of fresh Okra cut lengthwise 
4 tablespoonfuls of Olive oil
Salt to taste


SAUCE INGREDIENTS 
4 tablespoonfuls of Olive or Coconut oil
2 finely diced banana shallots or 1 large Onion
3 tablespoonful, of white wine vinegar. 
1 tablespoonful of Goats butter or any butter
Zest of 1 lemon (optional)
20g of chopped Greek basil / tarragon /mint / fresh fennel stalks
Salt and pepper to taste.

SAUCE METHOD 

In a saucepan, add the butter and Olive oil. Place the saucepan on a medium heat. Melt and heat the butter till it browns, but not burnt(Buerre noisette). Turn the heat to a lower setting and add the shallots.
Fry gently for 3 minutes (stirring frequently).
Add the Lemon zest and fry for another minute. 
Add the vinegar and increase the heat. Reduce the juice by a third, which should take about 3 minutes. 
Add the Greek basil / Tarragon or your preferred herbs, stir and remove from the heat.
Add salt and pepper to taste and serve.

THE GHANAIAN FRIED CHICKEN RECIPE YOU NEED TO TRY


The Ghanaian fried Chicken is the best you’ll ever have particularly if you pair it with the popular Ghanaian black chilli sauce known as Shito.

INGREDIENTS 
10 Chicken drumsticks 
30g of Ginger 
1 medium sized Onion
Half a teaspoonful of Caraway seeds/ Cumin seeds or Aniseed 
100ml of water
1 clove of Garlic
Kasoa Pepper or any Green chillies 
Salt to taste
300ml of your preferred oil for frying 

TO SERVE
