GUACAMOLE IN AN ASANKA

Guacamole is my favourite healthy dip that I make often, especially when I have Avocado at home. 





Ingredients
1 ripened de-hulled and peeled Avocado (cut into chunks)
Juice of 1 Lemon 
1 finely diced Jalapenos Chilli
1 diced shallot
1 clove of Garlic
Finely chopped 10g of Parsley or Coriander
2 tablespoonfuls of extra Virgin oil

Method

Add the Onions, Garlic and salt to your pestle and mortar . 
Mash the ingredients together until well mixed. 
Add the Avocado and lightly smash them into a rough texture. (Avoid mashing the Avocado into a smooth paste) 
Add the Jalapenos chilli and juice of the Lemon . Using a spoon mix everything together . 
Sprinkle the Guacamole with either chopped Parsley or Coriander and mix well with a spoon. 
Drizzle the Guacamole with Olive oil and serve with your warm bread, Plantain chips, Yam chips, Jollof rice etc
