KOOBI ANGWA MO - ARANCINI BALLS RECIPE ( Rice and Cheese balls)




Arancini Balls are Sicillian balls of Rice that are usually filled with Meat sauce, Mozzarella, coated in breadcrumbs and deep fried.  

'Angwa Mo', a popular Ghanaian Rice dish which translates to 'Oiled Rice', is usually made with salted Beef and served with Sardines and an Omelette. 

This recipe has fused two different cultures together without loosing the varied authentic flavours both dishes have.

I made the classic Ghanaian Angwa Mo with salted Fish instead of salted Beef on this occasion.

KOOBI ANGWA MO



I’ve used the left over  'Koobi Angwa Mo' which includes the crunchy bottom bits known as 'Kanzo' for this recipe.
Watch how I managed to use Thai Hom Mali Rice, which has less starch content to the classic Risotto rice which Arancini is made from. 
How did I manage to get the mixture in a pliable way to form a ball? 
First let’s tackle the ingredients you need for this recipe.

INGREDIENTS 
100g of Koobi Angwa Mo rice or any leftover rice
100g of grated Mozzarella 
3 Eggs
40g of Panko Breadcrumbs 
1 tablespoonful of Corn starch
40g of chopped Spring Onions
3 or more chopped Green Chillies (optional)
Salt to taste
300ml of your preferred oil for deep frying

HOW TO MAKE AN OMELETTE SOUFFLÉ RECIPE


Did you ever talk yourself out of a challenge only to be left with the feeling of ‘had I known’ later?
Well I soldiered on and tried this Omelette Soufflé for the first time.

HOW TO MAKE SALTED FISH PILAF RICE RECIPE (Angwa Mo with Koobi)


Imagine slow cooked Onion marmalade infused with Koobi(the Ghanaian salted Fish)which is then turned into this beauty called ‘Koobi Angwa Mo’ 
It’s not like any other Angwa Mo you have ever tasted ooh! This is precision with Fork and Knife separating Koobi ‘tings’ ooh!

You can use any salted Fish you have available including Salted Anchovies for this recipe.


Traditionally the oiled spiced Ghanaian Rice known as ‘Angwa Mo’ is served with an Omelette, Sardines and a hot red chilli sauce. You’ll find elements of these flavours in this recipe.
I can boldly say this ‘Koobi Angwa Mo’ gives Jollof rice a run for its money.

HOW TO COOK THE PERFECT RICE 



INGREDIENTS 
200g of Jasmine Rice washed till the water runs clear and soaked for 15 minutes 
2 large thinly sliced Onions
2 Habanero chillies
4 tablespoonfuls of Coconut oil
100g of Salted Fish cooked in 400ml of Water
150ml of the Salted Fish stock 
100ml of Water
Quarter of a teaspoon of grated Nutmeg
2 Bayleaves 
Optional Salt to taste

HOW TO MAKE THE PERFECT EGG FRIED RICE



‘Egg fried Rice’ is my go to dish when I don’t want to spend too much time in the Kitchen. On this day I had some leftover Angwa Mo, (which is a popular Ghanaian, flavoured oil rice dish) in the fridge.

Guess what? The popular flavour packed Ghanaian Angwa Mo was used as a base for this Egg fried rice, which  gave the dish that extra oomph!

My personal preference for Egg fried Rice is to bite into chunks of fried Eggs, hence this recipe reflects that.

I used extra long aged Basmati rice, my homemade salted Beef and Organic Eggs  for this recipe which allows for a flavour packed dish.

TOOLO BEEF/ SALTED BEEF RECIPE 



INGREDIENTS 
3 tablespoonfuls of Cold pressed and organic Coconut oil
1 large sliced Shallot or Onion
30g of salted Beef
5 diced Green Chillies
200g of Basmati Rice
Salt to taste 

SCRAMBLED EGG
1 tablespoonful of Cold pressed Organic Coconut oil
3 finely diced mild Green Chillies 
6 large Organic Eggs

HOW TO MAKE STRAWBERRY BITES



In the name of trying something new and working out of my comfort zone, I made these immune boosting Strawberry Bites for when we crave for something sweet.




INGREDIENTS 
10 large perfectly ripened Strawberries 
150g of desiccated Coconut 
80g of Cashew Nuts
1 tablespoonful of Coconut oil
Pinch of Salt to taste

HOW TO PREPARE THE AUTHENTIC GHANAIAN ETOR RECIPE


When I got a direct request from ‘Sheena Love’ for an Etor recipe, I had to check I had the basic ingredients to make this dish. Thankfully I recently made the Green Plantain Akara and just had the perfect Plantain for this dish. 


I had to be conservative with the amount of Salted Fish I used for this recipe (due to the ongoing lockdown in the UK) however you can use more if you prefer. It’s important to use more Onions for this dish as it’s lends its sweetness to the dish. You can reduce the amount of Chilli used particularly if you’re serving a child this dish.
Etor is a celebratory dish in Ghana which is made from either semi ripened Plantain, Yam or Cocoyam. I used the semi ripened Plantain for this recipe. 



INGREDIENTS 
1 semi ripened Plantain. You can also use Yam or Cocoyam for this recipe
30g of salted Fish (Koobi)
30g of roasted Peanuts
1 Habanero chilli
2 large Onions
1 tablespoonful of Zomi or Palm oil
3 or more boiled Eggs 
Avocado slices (optional)
Salt to taste

HOW TO MAKE GREEN PLANTAIN AKARA / KOOSE / KOSEY RECIPE




I promised to challenge myself in creating something new everyday and with no exception I’ve created this first of a kind ‘Green Plantain Akara’ recipe.
The recipe shows 2 different ways which includes a Vegetarian option. The Green Plantain Akara can be enjoyed anytime of the day.

1 large Green Plantain 
Quarter of a teaspoon of Bicarbonate Soda and Baking powder (optional)
1 diced Red Chilli
3 diced Green Chillies

1 egg Yolk
Salt to taste
Preferred Oil for frying
