ZAATAR BREAD SWIRL RECIPE

Zaatar spice mix, is one of my favourite Middle Eastern flavour, due to the herby and tangy nature of the spice mix. I've used the spice mix in grilling Chicken, which was a great hit with everyone that tried it. Over the years I’ve used ZA’ATAR for various recipes including grilled Chicken with Honey. ZA’ATAR spices are readily available online. The recipe has been filmed including a step by step guide on my YouTube channel, ‘Ndudu by Fafa’. Ingredients
310g of Bread Flour
3 tablespoonfuls of Zaatar spice mix
1 tablespoon of dry Yeast
1 teaspoon of Salt
1 teaspoon of Sugar
150g of Natural Yoghurt
15ml of Extra Virgin Olive oil
65ml of Lukewarm water

SMOKY FLAT BREAD PIZZA

Interestingly, Pizza has become one of the nations favourite imported food in Ghana. It’s popularity over the years across the country has encouraged a few openings of Pizzerias across the country.
The idea of making my own Pizza with the flavours I love encouraged me to create this recipe. The smokiness was inspired by my Mum’s char grilling of Tomatoes for sauces and a friends advise on how to get the stone baked smoky flavour for my flat bread.


With these knowledge I combined the two processes and ended up with a flavour packed customized Pizza that’s easy to emulate.
The bread mix includes natural Yoghurt, which gives the dough a nice tangy flavour and makes it soft.


I’ve started the ‘Ndudu by Fafa Simple supper series’ to encourage everyone to cook from scratch with the help of my Kitchen hacks.
Tip: When baking bread, please don’t add salt directly to the yeast. It kills the yeast.
One can be creative about the toppings they use for their Pizza. Try using The Ghanaian smoked Tuna, Keta  School boys etc as an alternative. You can omit the Cheese if you don’t have access to it, since the smoky salsa is packed full of flavour.

The first episode of the series was making of the smoky sauce , which I’ll be using to make this Pizza.
INGREDIENTS:

330g of bread flour
175g of lukewarm water
1 levelled teaspoon of salt
1 tablespoonful of natural Yoghurt
10g of dry yeast
1 teaspoonful of Sugar
3 tablespoonful of Extra Virgin Olive oil

TIPS:

  • The inclusion of Yoghurt softens the dough and allows the dough to rise quickly
  • Always add the salt first to a bowl, then the flour and the rest of the ingredients. Please avoid having the yeast come into direct contact with the salt. Salt kills the yeast, hence your dough won't rise. Mixing everything together to form a dough after is perfect.

SOFT YOGHURT BREAD



 
Ingredients 
620g of strong bread flour
300g of natural Yoghurt 
30ml of extra virgin Olive oil
1 tablespoon of salt
1 tablespoon of Sugar
2 tablespoonful of dry yeast
130ml of warm water
Extra flour for dusting 


 
Method 
Add the salt to your mixer , then the flour, Sugar and dry yeast. Mix everything together and add the Yoghurt  and olive oil.


Using a Mixer
Attach the bread hook to the mixer and start mixing the dough.
Gently add the water and mix for 10-12 minutes .
Mix till you have a glossy and stretchy dough. 

By Hand
Transfer all the ingredients as per earlier instructions into a bowl. Using your clean washed hands , mix everything together till you form a soft dough. Flour a clean surface and knead the dough for about 20 minutes or until you have a stretchy, glossy and smooth dough. 

Proofing
Once you've achieved the perfect bread dough, transfer to a bowl and cover with an oiled cling film.
Place the bowl in a warm place to proof for an hour. 

Tip
For a quicker rise, place it near a warm Oven.

Once the bread dough has doubled in size, transfer it again to a clean floured surface. Knead the dough again, divide it into 2 equal parts and roll them into an oblong shape. 

Oil the bread tins and place the oblong shaped dough in each tin. Cover again with an oiled cling film (this prevents the bread dough from latching onto the cling film) and leave it to double up in size again. This should take about 45 minutes to an hour.

Pre heat your Oven, at least 10 minutes before your bread dough is ready to 180*c

Once the bread has doubled up in size, remove the cling film and place it in the middle of your Oven and bake for 25-30minutes or until you hear a hollow sound when tapped.

This soft Yoghurt bread works perfectly with extra virgin Olive oil and balsamic vinegar. Serve with a Tomato , Avocado and Onion salad.
