GOAT SAAG (SPINACH) STEW RECIPE



Inspired by the Indian dish Saag (Spinach) where one can either use Beef, Lamb, Chicken and or Paneer (a Vegetarian Indian Cheese; this recipe used Goat meat and Paneer in making a Goat Saag recipe. 
You can replace the Paneer cheese with the Ghanaian cheese known as Wagashi.



The video recipe delves into the benefits of  Carom seeds and how to use Shea Butter for cooking.

I served this healthy Spinach and Goat stew with Waakye (the Ghanaian Rice and Beans dish).

WAAKYE RECIPE 👇🏾



INGREDIENTS 
1kg of Goat Meat
1 tablespoonful of Garam Masala spice mix
4 pods of Cardamom 
5 chopped Green Chillies
1 teaspoonful of ground Cumin
4 tablespoonfuls of your preferred oil (I used Shea Butter for this recipe)
1 teaspoonful of freshly milled Black Peppercorns 
1 large sliced Onion
250g of Paneer Cheese or Wagashi(the Ghanaian Cheese)
400g of blended Spinach

SPICE MIX
30g of Ginger
1 teaspoonful of Ajwain/Carom seeds
3 Cloves of Garlic
1 large Onion

THE GOAT MEAT AND PANEER CHEESE STEW RECIPE


Just imagine consuming half of your Goat meat which was intended for the stew.  Yeah! I blame the hunger, as I had spent a few hours shopping for groceries and the Goat meat was rather delicious. In a bid to make up for my 'weakness' I added the Japanese Shiitake mushrooms, Indian Paneer Cheese , Carrots and Onions to create this 'United Nations Goat Meat Stew'. 

I used my homemade Passata (Tomato sauce) for this stew, which will cut your cooking time in half. The recipe also ensures the Tomato looses its sharp taste.

TOMATO SAUCE/PASSATA RECIPE 


INGREDIENTS 
3 ladles of your Homemade Tomato sauce
2 large sliced Onions 
1 levelled teaspoon  of Chilli powder
1 teaspoonful of Smoked Paprika
1 ladle of your preferred oil (reserve the spiced oil for an omelette)
2 Bayleaves 
Salt to taste

TO BULK UP YOUR STEW
250g of Indian Paneer Cheese or the Ghanaian Wagashie cheese
250g of Shiitake Mushrooms or any Mushrooms thy are available to you. You can also use a teaspoonful of Fish sauce or DawaDawa (fermented locust beans) instead.
2 diced Carrots
60g of Shallots

GOAT MEAT
1kg of diced Goat meat which includes some bones from your butcher 
30g of Ginger
3 cloves of Garlic
1 large Onion
1 tablespoonful of Aniseed or 3 Star Anise.
2 Scotch Bonnets.

THE PERFECT GOAT MEAT STEW YOU MUST TRY


This story started with the Evergreen Okro soup (Fetri Toto) recipe and  inspiration from the classic Ghanaian Tuo Zaafi dish.
Traditionally Tuo Zaafi comprises of Ayoyo (Molokhia/ Jute/ ADEME) sauce and a flavour packed stew which is served with a steamed pliable Corn and Cassava flour ball. 


Since I had the Evergreen Okro soup, I thought why not add the stew and serve with Akple.
Enjoy the most amazing Goat Meat stew recipe which can be enjoyed with your favourite carbohydrates now.



INGREDIENTS 
1 kg of Goat Meat 
1 Habanero chilli
1 Cinnamon stick

SPICE BLEND
30g of Ginger
1 large Onion
1 levelled tablespoon of Aniseed 
3 cloves of Garlic 

300ml of your preferred oil for frying and creating a seasoned oil that can be reserved for other recipes 
2 large Onions 
30g of fresh Thyme 
2 tablespoonfuls of Tomato Purée 
750g of blended Tomatoes
Half a teaspoon of grated Nutmeg 
20g of Rosemary 
6 Bay leaves 
2 chopped Green Peppers
4 chopped Green mild Chillies
2 Habanero Chillies (The amount of Chillies you add should suit your personal preference.
Salt to taste

GOAT MEAT STROGANOFF


What about this creative and equally Russian inspired recipe for lunch or dinner, using everyday ingredients?


1kg of Goat Meat
80ml of double cream
2 tablespoonful of Sour Cream
1 large peeled and sliced Onion or Shallot
300g of Mushrooms (Shiitake, Chestnut etc)
250ml of water
1 teaspoonful of Corn flour or Plain flour (mix with 4 tablespoonful of water)
80g of chopped Spinach
1 teaspoonful of  English or French mustard
1 tablespoonful of Worcestershire sauce (Lea Perrins) or Dark Soy Sauce
Salt and Pepper to taste

SPICE MIX
1 teaspoonful of Aniseed
30g of fresh Ginger
1 large Onion
Garlic

THE TASTIEST GOAT MEAT STEW INFUSED WITH PREKESE




PREKESE (Tetrapleura tetraptera)

Native to Western Africa (particularly in Ghana and Nigeria) where it’s readily used, Prekese as known in Ghana or Uhio in Nigeria is part of the Pea plant family.

The fruit has a sweet fragrance that can be lost if not stored properly and doubles up as a spice. Prekese is usually used in making drinks and soup such as (Palm nut soup, Banga soup or Light soup) and it is rather unusual to use it in stews. 

The idea behind this recipe is to create other inspiring ways to using our local spices, create new flavours and recipes.  The inclusion of Prekese to the traditional Tomato based stew in this case was to infuse its sweet flavour to the dish.
 Prekese is rich in protein, lipids, potassium, iron, magnesium, phosphorous, and vitamin C hence its inclusion also in stews can only benefit the eater. 



Bulgar Wheat Jollof

I made this recipe for my Mum, portioned it into little containers, froze them which gave her the flexibility of using it as and when a recipe requires it. 
It is a perfect sauce for making something different for Christmas and a must try. 
Be adventurous and use the stew as a base for your Jollof rice. Try using the Ghanaian Brown Rice for that nutty flavoured Jollof rice.

INGREDIENTS
1kg of Goat meat
2 large Onions
10g of Ginger
10 fresh Green Chillies (Any chillies of your choosing)
1 teaspoon of dried Rosemary
1 teaspoon of Cumin seeds (optional)
1 large Prekese
150ml of water (Steam the Goat meat on your lowest setting for 45 minutes)
600g of fresh blended Tomatoes or make your own Passata as shown below;


80g  of Tomato puree
1 stock cube (Optional) This was omitted from the video recipe. 
100 ml of your preferred oil
Salt to taste

Spice blend
1 large Onion
1 tablespoonful of Aniseed
2 cloves of Garlic
30g of Ginger

THE TASTIEST PEPPERED GOAT MEAT RECIPE


The second episode for the ‘Spice series’ on my YouTube channel, ‘Ndudu by Fafa’ talks about the spice ‘Carom or Ajwain’, the benefits and how to incorporate it in a recipe.

Carom seeds (more of a seed like fruit), helps with reducing acidity in the gut, improves digestion, is anti-inflammatory (reduces pain) including headaches, toothaches, sore throats, used as an Insect repellent etc however one shouldn’t consume more than 10g a day. 

Side effects:
Excessive consumption (10g a day) can cause mouth ulcer, burning sensations etc
Please consult your Doctor before consumption.

Please avoid if you suffer from Stomach Ulcer, Internal bleeding, Ulcerative colitis and Mouth Ulcer.

INGREDIENTS 
1kg of Goat Meat

Marinade:
20g of Ginger
1 medium sized Onion
Half a teaspoon of Carom seeds
1 teaspoonful of Aniseed
15g of smoked Red chillies
2 pod of African Nutmeg 
1 whole Habanero Chilli

PEPPERED GOAT MEAT
1 tablespoonful of cold pressed Organic Coconut oil
1 large Onion
1 teaspoonful of Red Chilli flakes
6 Chocolate mint leaves (Optional)
Salt to taste 


CHOCOLATE MINT HERB (My next blogpost will be about this wonderful herb).

Please note this is a spicy recipe and its best served with Yoghurt, Lime or Lemon wedges. Best served with boiled Jasmine rice👌🏾

TASTIEST GHANAIAN , GOAT MEAT SOUP RECIPE


Light soup is a spicy tomato based soup which can be made with Poultry, Meat and or Fish. 

Light soup and Fufu (a mixture of Cassava and Plantain) is enjoyed mostly on a Saturday or Sunday in Ghana as it’s a labour intensive in its preparation. Traditionally, Cassava and Plantain are boiled and pounded to form a pliable dough,known as Fufu. Fufu can be enjoyed with any soup of your choosing. Fufu and Light soup on a Sunday is what Sunday roast is to a British.

Ingredients
1 Kg of diced Goat meat 
1 large Tomato
1 large Onion
80g of Tomato Paste or Puree
5 Garden Eggs and or 8 Okra
1 Habanero Chilli
10 Pettie Belle Chillies (Kpakpo Shito)
1 stock cube (optional)
1.5 litres of Water/ Vegetable stock or Beef Stock
Salt to taste

Marinade
1 tablespoon of Aniseed
1 large Onion
30g of Ginger
2 cloves of Garlic
