QUICK OVEN GRILLED AROMATIC SEA BREAM


How about starting your week with this aromatic recipe?
What will you serve this with?

INGREDIENTS 
2 large descaled and gutted Sea Bream/ Red Snapper/ Tilapia/ Cod/Sea Bass
1 tablespoonful of Chinese 5 spice mix
2 tablespoonfuls of Sesame oil
1 teaspoonful of Fish sauce or a pinch of Dawadawa powder
Salt to taste

2 tablespoonfuls of Coconut oil
1 teaspoonful of Fennel seeds / Aniseed 
3 sliced Cloves of Garlic
1 tablespoonful of julienne cut Ginger pieces
30g of chopped Spring Onions
2 chopped Green chillies (the amount should suit your personal preference)

COFFEE & WALNUT CAKE RECIPE USING THE SENEGALESE CAFÉ TOUBA


Coffee and Walnut cake is one of my favourite cakes to enjoy now and again. Naturally l love incorporating new flavours to most of my recipes and this is no exception. After trialling and finally creating the Café Touba (spiced Coffee) from Senegal, the idea of incorporating it into my cake made me excited. 


’Café Touba’, named after the Senegalese city of Touba, is a famous, spiced Coffee drink from Senegal and Guinea Bissau. 




The authentic recipe is a guarded open secret, however I’ve managed to get that distinctive flavour, that Café Touba is known for.

INGREDIENTS 
2tbsp instant Coffee mixed with 4 tablespoons of Water or 30ml of Café Touba espresso .  
100g Walnut halves
30g of whole Walnuts for decorating 
225g Butter at room temperature
150g - 225g of soft, light-brown sugar (I used less sugar for my recipe)
4 eggs, beaten together
225g self raising flour
A pinch of Salt



FILLING
250g of Creme Cheese 
80g of Icing Sugar
20ml of Café Touba

HOW TO MAKE BROCCOLI STIR FRY RECIPE


Thank you to everyone that voted for this recipe via my Instagram stories ‘Ndudu by Fafa’ and YouTube Community page.
As promised enjoy this quick and nutrient packed recipe that requires a few ingredients.

TIPS
Best to steam your Broccoli than boil it
Steam for 3 minutes and stir fry for a further 2 minutes 
Reserve the Broccoli stalks and use for Stock or making Soup.



INGREDIENTS 
1 large head of Broccoli 
1 medium sized sliced Onion
5 Red Chillies (reduce the amount of Chillies to your personal preference)
2 Green Chillies
20g of thinly sliced Ginger (Julienne cut)
2 large sliced Cloves of Garlic
1 teaspoonful of Sesame seeds
3 tablespoonfuls of Sesame oil
250g of washed Oyster Mushrooms/ Shiitake Mushrooms/ Chestnut Mushrooms
20ml of Water
Salt to taste

THE MUSTARD & GARDEN EGG LEAVES STEW RECIPE


The fresh Mustard leaves caught my attention as I asked the Grocer how it’s prepared. Whilst answering my question, I matched my next recipe to the Nigerian Efo Riro , as I quickly got my Garden Egg leaves .
I imagined adding my smoked Fish to the recipe on my drive home, which filled me with excitement.
The peppery flavour of the mustard leaves , mixed with the slight bitter Garden Egg leaves and smoked Fish, makes this dish the ultimate flavour packed recipe.



INGREDIENTS 
400g of chopped Mustard leaves
300g of Garden Eggs leaves
2 large Red Peppers 
1 large sliced Onion
1 ladle of Zomi (Spiced Palm Oil)
2 sliced Habanero chillies 
1kg of smoked Fish
1 levelled teaspoon of Dawadawa powder (Fermented Locust Beans)
Salt to taste

SPICE BLEND 
30g of smoked Shrimps 
30g of Ginger
1 large Onion
1 levelled tablespoon of Aniseed

THE SENEGALESE CAFÉ TOUBA with THE NDUDU TWIST



’Café Touba’, named after the Senegalese city of Touba, is a famous spiced Coffee drink from Senegal and Guinea Bissau.

Coffee beans are roasted with spices such as Grains of Selim (Etso/Hwentia), Guinea Peppers, Cloves and at times Ginger. The open secret recipe 

This spicy Coffee drink is Senegal’s best kept secret recipe. I researched and trialled different methods of creating this incredible recipe and I’m happy with this flavour packed recipe.


INGREDIENTS 

150g of roasted Coffee Beans

1 levelled tablespoon of Guinea Peppers

1 African Nutmeg

5 Cloves

5 Grains of Selim pods (Hwentia/Etso)

10g of fresh Ginger (optional)

CHICKEN GIZZARD STIR FRY RECIPE


Imagine bitting into a crunchy, moist and spicy Chicken Gizzard and the flavour changing by biting into Garden Eggs and Onions at the same time. This is food mouth heaven! Enjoy this cost effective recipe folks 😘



INGREDIENTS 
500g of Chicken Gizzard
3 Bay leaves
1 Habanero Chilli
3 stalks of fresh Rosemary or teaspoonful of dried Rosemary 
2 cloves of Garlic
3 Thyme stalks
200ml of your preferred oil for frying. Use 4 tablespoonful of the seasoned oil for the stir fry.
1 large sliced Onion
5 large diced Garden Eggs or 1 large Aubergine 
Salt to taste
4 tablespoons of the Ndudu Chilli sauce (Recipe below)




SPICE BLEND
30g of Ginger
1 levelled tablespoon of Aniseed
1 large Onion
3 cloves of Garlic

THE QUICK OVEN GRILLED SMOKY TILAPIA RECIPE


The recipe that should make your Friday dinner as it is easy and quick to emulate.
You can use other types of Fish for this recipe particularly, Red Snapper, Sea Bream, Sea Bass, Cod etc.

INGREDIENTS 
1 large descaled and gutted Tilapia (or your preferred Fish)
4 tablespoonfuls of Olive oil or Coconut oil
2 sliced large Green/Orange or Yellow peppers. You can use any vegetables you have access to
1 large sliced Red Onion
1 Lime/Lemon
Salt to taste



Marinade 
1 large Onion
1 Lemongrass stalk
30g of charred Ginger
1 large char grilled Red Pepper
14 Thai Red Chillies (Reduce the quantity of Chillies to your personal preference)
1 Habanero chilli
4-5 cloves of Garlic 
20g of Thyme
