THE AUTHENTIC SWEET POTATO POTTAGE (MPOTOMPOTO) RECIPE

Autumn beckons and as such comfort dishes are a must. Starting with this authentic Ghanaian Sweet Potato Pottage or Mpotompoto recipe.

INGREDIENTS 
1 large diced Japanese Sweet Potatoes 
2 large sliced Onions
5-10 Green chillies 
1 clove of Garlic 
4 strands of Grains of Selim (Hwentia)
2 cloves
2 African Nutmegs
1 ladle of Palm oil
1-2 large smoked Fish
800ml of water
1 ladle of blended Tomatoes 
Salt to taste

SPICE BLEND
30g of Ginger 
1 clove of Garlic
1 large Onion

HOW TO MAKE PUFFED RICE CAKES

Rice cakes were popular 80’s snacks in Ghana but are rare to find these days. One had to save their little Pesewas to buy and enjoy this snack. 
During the same period a game known as ‘tchem p3’ (spelt phonetically) which means ‘divide in 2 equal parts’ was equally popular. 

The rules of the game stipulates all participating members must divide anything they had in two if caught by a member. This meant one had to have some wit about themselves to avoid been caught.

How about recreating that nostalgic childhood memory today by trying this easy to follow recipe?

100g of Rice Puffs / Bubbles (available in most Indian grocers)
1 cup of granulated sugar

THE AMAZING SUYA BEANS RECIPE YOU MUST TRY


Just imagine the nutty and buttery texture of beans, mixed with that Umami flavoured salted beef, the fishy taste of Tuna with the hint of heat from the Cayenne pepper and that smoky nutty taste of your preferred charcoal grilled Suya all in a pot. Now imagine savouring all these flavours in this incredible beans stew recipe which pairs well with that caramelised sweet taste of fried ripened Plantain. Gosh! 



INGREDIENTS 
250g of Cannellini beans or Black eyed beans soaked at least for an hour
1.5 litres of water 
3 Bay leaves 
4 stalks of Grains of Selim (Hwentia)
3 dried red chillies 
6 tablespoonfuls of your preferred oil
1 large sliced Onions
1 diced salted beef
4 green chillies
2 tablespoonfuls of Tomato purée 
1 tablespoonful of Cayenne pepper 
200g of Passata or blended Tomatoes 
1 tinned Tuna
250g of Goat/Lamb/Beef char grilled Suya 
30g of chopped Spring Onions or Onion flowers
Salt to taste

SPICE BLEND
30g of Ginger
1 clove of Garlic
1 large Onion 
1 teaspoonful of Aniseed 
40g of dried Shrimp

THE AUTHENTIC ASAANA/ LIHA RECIPE ( CARAMELISED CORN DRINK)


I finally found the most authentic way of making the famous West African fermented corn drink known as Asaana, Liha,Tchakpalo, Dolo or Aliha.
The fermented and germinated corn kernels are milled, mixed with water, fermented further and added to Caramel for that distinctive dark brown to black look. 
The inclusion of Salt in this recipe is optional as it helps reduce the amount of Sugar used.
 The amount of Sugar used should suit your personal preference. When next you are in Ghana, Togo or Benin do enjoy a calabash full of this ‘goodness’.

180g of all natural Yoghurt
