HOW TO MAKE SCRAMBLED EGGS WITH EXTRA FLAVOURS


INGREDIENTS 
3 large Eggs
1 Duck Egg
1 tablespoonful of Butter
1 medium sized Onion
1 tablespoonful of Sun-dried Tomatoes 
3-4 Salted Anchovies (optional)
2 chopped Green Chillies
Salt to taste

HOW TO MAKE THE PERFECT EGG FRIED RICE



‘Egg fried Rice’ is my go to dish when I don’t want to spend too much time in the Kitchen. On this day I had some leftover Angwa Mo, (which is a popular Ghanaian, flavoured oil rice dish) in the fridge.

Guess what? The popular flavour packed Ghanaian Angwa Mo was used as a base for this Egg fried rice, which  gave the dish that extra oomph!

My personal preference for Egg fried Rice is to bite into chunks of fried Eggs, hence this recipe reflects that.

I used extra long aged Basmati rice, my homemade salted Beef and Organic Eggs  for this recipe which allows for a flavour packed dish.

TOOLO BEEF/ SALTED BEEF RECIPE 



INGREDIENTS 
3 tablespoonfuls of Cold pressed and organic Coconut oil
1 large sliced Shallot or Onion
30g of salted Beef
5 diced Green Chillies
200g of Basmati Rice
Salt to taste 

SCRAMBLED EGG
1 tablespoonful of Cold pressed Organic Coconut oil
3 finely diced mild Green Chillies 
6 large Organic Eggs

THE SMOKY JOLLOF FRIED RICE RECIPE




‘Jollof Rice has over the years risen in its popularity thanks to the Nigeria and Ghana’s friendly competitiveness and the infamous ‘botched’ attempts (as frowned upon by the purists) by international companies and famous individuals.



I’ve partaken in reinventing Jollof Rice by the plethora of recipes I’ve created over the years including Jollof Arancini, Sticky Jollof Rice, Omurice etc (all available on my YouTube channel, ‘Ndudu by Fafa’).


 A perfect Jollof Rice recipe requires a flavour packed Tomato based sauce and must have that distinctive deep orange colour.

INGREDIENTS 
250g of Smoked Bacon lardons 
2 Eggs
20g of chopped Peppers

I’ve just added to the existing controversy of Jollof making by microwaving it (in honour of prepackaged Jollof Rice available in some supermarkets across the UK)



Verdict - It works however it misses the distinctive smoky flavour that’s achieved when cooked in a pot, especially over coal. A great recipe for students and for a quick recipe (provided you have made your Jollof stew)’.



No sooner had I left the above lengthy statement  on my post did a few followers highlight the lack of ‘smokiness’ and ‘crispy bottomed’ part of the rice known as ‘Kanzo’.
 With this in mind I’ve used the leftover Jollof for this smoky Jollof Rice recipe.

TASTIEST GHANAIAN FRIED RICE RECIPE EVER



Introducing the naturally flavour packed and tastiest fried rice recipe ever. This recipe makes for a smoky, aromatic and perfectly spiced fried rice dish.
A must try recipe!

INGREDIENTS

FLAVOURED RICE  
300g of Basmati rice or Long grain rice washed and soaked rice in warm water
200ml of water or your preferred stock
2 tablespoonfuls of salted butter
1 tablespoonful of butter
7 Pettie Belle chillies or any green chilli
2 pods of Grains of Selim (Hwentia)
1 leg of smoked Chicken (Click here for the recipe)
Salt to taste




FRIED RICE 
1 tablespoonful of Coconut oil 
1 large diced Onion
3 chopped Green Chillies (Optional)
3 Eggs
30g of spring Onions
1 tablespoonful of dark soy sauce
200g of frozen fresh mixed Vegetables 
300g of your cooked flavoured rice.

PRAWN & COCONUT FRIED RICE RECIPE

This is a quick and tasty recipe, perfect for one with a  busy life. Be creative and use any vegetables, meat, fish, poultry and seafood you prefer. Recipe for a perfect fluffy cooked rice is available on my blog. Enjoy this crunchy fried rice and the burst of fried ginger as you bite into each morsel. #Ndudu

 Serves 6
Ingredients; 
400g of cooked rice (basmati rice,long grain rice, Jasmine rice or brown rice)
4 tablespoons of cold pressed Organic Coconut oil
4 tablespoons of dark soy sauce
100g of frozen peas
200g of frozen mixed vegetables 
2 large finely diced shallots
100g of chopped spring onions
60g of finely diced ginger
20 large prawns


Method;
Place a wok (use whatever pan you have) on a medium heat. 
Add the shallots and fry for about 3 minutes, making sure you stir continuously. This allows the onions to cook evenly.  
Then add the ginger and fry for 2 minutes and stir.
Add your frozen peas and mixed vegetables and continue to stir,  till it's well coated with the shallots and ginger mix. 
Add the cooked rice and continue to stir for 6 minutes 
Add the dark soy sauce and stir till well mixed and cook for 2 minutes. 
Add the Prawns and reduce the heat. Cover the rice and steam the Prawns for about 3 minutes. 
Stir, sprinkle spring onions and coriander. 
Turn the heat off and serve immediately. 

I've omitted salt from this recipe as the soy sauce is salty. 

 This is another version of the fried rice with char grilled Suya beef.

SUYA BEEF FRIED RICE


As I opened my fridge, I saw my leftover rice and Beef Suya and decided on making fried rice for my packed lunch. 
Realistically, I could've made a simple egg fried rice but I craved for the Beef Suya I had the night before. 
The Suya gives the dish a spicy and nutty flavour which is perfect to enjoy in this cold weather.
If you're lucky enough to have a charcoal grill use it to cook your meat for a smoky flavour. 
Enjoy this easy to follow recipe and share your pictures.

Ingredients 

300g of cooked Jasmine Rice 
40g of Suya spice mix
2 tablespoonfuls of Coconut oil / Olive oil
30g of Spring onions 
20g of chopped Coriander 
600g of Rump steak
10g of chopped Oregano (optional)
1 tablespoonful of Chipotle chillies 
2 sliced Green Peppers
2 large finely sliced Onions
Salt to taste

Mix the Suya spice with Chipotle chillies (readily available in most supermarkets) and warm it up in a frying pan, as shown below. 
Warming your Suya spice mix releases the oil and flavours. 


 

Using a meat tenderiser (available online) beat the meat to break down its fibres (this makes the meat tender when cooked).

 If you don't have a meat tenderiser use a rolling pin instead. Your meat should look flattened after been tenderised.

 If you're using a tough cut of meat, this process of tenderising ensures you have a soft and tender meat. 

 

Place your sliced Onions and Green Peppers in a baking tray.
Sprinkle your meat with Suya spice mix and rub it on both sides. 
Sit the meat on top of the Onion and Green Pepper slices (as shown above). 

Place your Suya spiced meat in the fridge to marinade for at least an hour. This allows the meat to absorb the flavours of the Suya spice. 

When you're ready to cook your meat, take the meat from the fridge and bring it to room temperature for about 15 minutes. 

Pre heat your grill to 200*c.
Drizzle the meat with 1 tablespoonful of Coconut oil or Olive oil and Oregano (optional).
Place your meat under the grill and cook for 6 minutes.
Take the meat out of the grill and leave it to rest. 

In a Wok or frying pan add the remaining Coconut oil and place on a medium heat.

Add the rice and fry for 4 minutes, ensuring you consistently stir it. 

Add the juices from the meat, mix and fry for another minute.

Slice the meat into sizeable chunks and add it to the rice. Fry the rice for a further 2 minutes and add the grilled Onions and Green peppers. 

Mix everything together, sprinkle the chopped Spring Onions and fresh Coriander over the rice. 

Serve immediately and enjoy with a Pineapple and Ginger smoothie. The perfect remedy for this cold weather. I managed to capture the Suya fried rice on my frozen glass table, as shown below.
