How to cook the tastiest Eggs and Melon seeds stew



Sharing one of my Mum’s classic nutrient packed recipe. Enjoy!

INGREDIENTS 
300g of blended Melon seeds/ Egusi 
4 tablespoonfuls of Coconut Oil
3 large Banana Shallots or 2 large Onions
1 Habanero Chilli
1 tablespoonful of Shrimp Powder 
350g of Smoked Haddock 
300g of Smoked Mackerel 
6 Eggs
300g of Cherry Tomatoes or any Tomatoes you have available 
1 tablespoonful of smoked Paprika 
Salt and Black Peppercorns to taste

GARNISHES 
2 sliced large Onions 
40g of chopped Spring Onions 
Optional Golden Blush Tomatoes 


SPICE BLEND
30g of Ginger 
1 large Onion 
3 cloves of Garlic 
1 teaspoonful of Aniseed 
4 Allspice pods
4 Green Chillies

STUFFED YAM RINGS RECIPE (THE AMAZING THINGS YOU CAN CREATE WITH YAM)




In the second episode of ‘The many ways to enjoy Yam’ I present this creative way of enjoying Yam and Eggs.
A perfect addition to your canapés or picnic baskets. Serve with your favourite stew, chilli sauce or protein 




To start you will need;

INGREDIENTS 
Serves 2
6 thin disc shaped sliced Yam pieces 
1 large Egg
20g of finely diced Peppers 
4 finely diced Green Chillies
1 small finely diced Onions
1 teaspoonful of Corn starch/flour
Salt to taste

THE ULTIMATE WAY OF FRYING PLANTAIN


I had this crispy and fried Plantain coated in Cornflakes at a restaurant in Barbados (Tides) and since preferred to enjoy my fried Plantain this way. 


The waiter was kind enough to get me the recipe and naturally I’ve tried it with Breadcrumbs and Corn meal.

You can get Plantain in most ethnic shops or from selected Supermarkets. Treat yourself to this amazing vegetarian dish. Serve with Guacamole, Houmous etc


INGREDIENTS
Serves 4
2 large peeled and sliced Plantains to your preferred shape
300ml of your preferred oil 
4 tablespoons of Panko breadcrumbs /Ground cornflakes or Corn meal
1 large beaten Egg
Salt to taste

SUYA BREAD SWIRLS RECIPE


Yaji spice (which is used in making the ever popular Suya) is a peanut base dry mixed rub from West Africa (Ghana and Nigeria). It’s best used for marinating Meat, Fish, Vegetables or Poultry for the grill in making your personalised Suya.
Inspired by the Nigerian sandwich I created these bread swirls.

Imagine freshly baked Butter or Agege bread with Avocado butter, grilled Suya and Onion slices for a sandwich. You can turn this dream into a reality ooh!
 Thank me later for the inspiration 😘. 
Yaji (Suya) spices are readily available in most African shops and online, however you can make your own as shown below;



INGREDIENTS 
1.5 teaspoonful of Salt 
330g of Bread flour 
7g of Yeast
1 tablespoonful of Sugar
2 tablespoonful of natural Yoghurt (optional )
Half a teaspoon of Vitamin C powder
30ml of Olive oil or 30g of butter
75ml of lukewarm water
30ml of Olive oil for rolling the dough.
60ml of water for the Oven.


SPICES
30g of Yaji (Suya) spice mix
10g of Cumin seeds (optional)
10g of Caraway seeds (optional)
Optional Onion or Garlic flour

MOIN MOIN (GLUTEN FREE BEAN PUDDING) RECIPE


Moin-Moin is a gluten free, spiced bean pudding from Nigeria. Ghana has a similar recipe known as Tubani.
Moin-Moin traditionally is steamed in Banana or Waakye leaves , which tends to give the pudding a distinctive flavour. 
It’s a must try especially since it’s Gluten free and packed with natural flavours. 

Ingredients 
150g of peeled black eyed beans 
70g of Karahi Chicken stew
65ml of water 
1 large egg
1 Red Pepper
1 Habanero Chilli 
1 teaspoonful of Shrimp powder 
Salt to taste
