This is a quick and tasty recipe, perfect for one with a busy life. Be creative and use any vegetables, meat, fish, poultry and seafood you prefer. Serves 6
Ingredients;
400g of cooked rice (basmati rice,long grain rice, Jasmine rice or brown rice)
4 tablespoons of cold pressed Organic Coconut oil
4 tablespoons of dark soy sauce
100g of frozen peas
200g of frozen mixed vegetables
2 large finely diced shallots
100g of chopped spring onions
60g of finely diced ginger
20 large prawns
Method;
Place a wok (use whatever pan you have) on a medium heat.
Add the shallots and fry for about 3 minutes, making sure you stir continuously. This allows the onions to cook evenly.
Then add the ginger and fry for 2 minutes and stir.
Add your frozen peas and mixed vegetables and continue to stir, till it's well coated with the shallots and ginger mix.
Add the cooked rice and continue to stir for 6 minutes
Add the dark soy sauce and stir till well mixed and cook for 2 minutes.
Add the Prawns and reduce the heat. Cover the rice and steam the Prawns for about 3 minutes.
Stir, sprinkle spring onions and coriander.
Turn the heat off and serve immediately.
I've omitted salt from this recipe as the soy sauce is salty.
